You guys it’s officially fall AND Canadian thanksgiving! Do you know what that means?.. Maple EVERYTHING. That’s right.
Being born and raised in Northern Ontario, it’s no stretch of the imagination that one of my favorite fall flavors is maple. I mean come on, you can add it to so many recipes- desserts, marinades, and it makes for a really great sweet and salty combo! The options are truly endless.
SO in the spirit of yummy food, I’ve got a super easy dish that’s great for this time of year, and suitable to accommodate a variety of dietary restrictions. Give it a try and let me know what you think!
- Prep Time: 15min
- Bake Time: 40min
- Total Time: 55min
Ingredients:
- Approximately 2lbs of sweet potatoes, washed, peeled, and cut into 1inch cubes.
- 1/3 cup real maple syrup.
- 2tbsp melted ghee (or butter for those who can tolerate lactose).
- 1/2 tbsp lemon juice.
- 1 tsp cinnamon.
- 1/2tsp nutmeg
Instructions:
1. Preheat oven to 400 degrees F.
2. Transfer cubed sweet potatoes into a baking dish. I use a glass roasting dish with a lid (approx. 10inches in diameter).
3. Combine all other ingredients into a small bowl, whisk together and drizzle onto potatoes.
4. Toss to lightly coat.
5. Cover and bake for 15minutes.
6. Gently stir again and bake for another 15minutes. Repeat once more, or until golden brown and tender.
7. Sprinkle salt & pepper to taste. Serve and enjoy!
