Healthy Homemade Popsicles

A little while back, while Toronto was in lock down, I got a random craving for a popsicle. I don’t remember the last time I had one, but it was a particularily humid day and for whatever reason all I could think about was a fruit popsicle. In effort to not make unnecessary trips to the grocery store, I began scouting my kitchen for potential ingredients. With some left over coconut milk, and some over-ripe bananas I whipped up my first batch. Pleased with how they turned out, I attempted a few other flavors. Below are my top 4 healthy homemade popsicles that literally took only minutes to make.

You'll Need...

Banana Coconut Cream
Pineapple
Chocolate
Strawberries & Cream

Instructions:

1. Simply place all of your ingredients for the flavor you’re making into the blender. Blend it until liquified, pour into molds, and freeze for 90minutes.
2. Once frozen, run the popsicle mold under hot water and gently pull the stick to remove the contents- enjoy!

Makes 6 popsicles

As an alternative you can also use Cashew or almond milk. The thicker the better.

I soak my berries with some sea salt to kill any insects but this is totally optional. Remember to rinse them well so they don’t have a salty taste!
